Our Story

Buenos Aires Has a Dark Side.
We chose the light.

Every great cocktail bar in Buenos Aires tells you to go underground — into the dark, into the vault, into the speakeasy. They wear their shadows like a uniform. We love those bars. But we wanted to build something different.

Raíz was born from a question: what if a cocktail bar in Argentina looked like Argentina? Wheat fields at noon, afternoon light through vineyard leaves in Mendoza, the warm clay of a Salta pottery studio, yerba mate steam curling up from a gourd on a wooden table.

We opened in Chacarita — a neighbourhood finally allowed to become itself — and built a space that breathes. Every drink on our menu traces a direct line back to a place, a producer, an ingredient grown in Argentine soil.

The Larder

Six Ingredients That Define Argentina

01 Misiones, NE Argentina

Yerba Mate

Bitter, vegetal, grassy. The national obsession. We use it as a vermouth modifier and tincture base — adding a tartness no import can replicate.

02 Mendoza, Cuyo

Malbec Reduction

Sun-dried grape must reduced to a syrup of extraordinary depth. Replaces simple syrup in our stirred classics — earthy, fruit-forward, unmistakably Argentine.

03 Patagonia, South

Calafate Berry

A wild Patagonian berry, deep blue-purple, tasting of blueberry and wild plum. Foraged in season. Frozen and used whole. Says legend: whoever eats calafate will return to Patagonia.

04 Salta & Jujuy, North

Andean Coca Leaf

Legal, ancestral, and complex. Used in small-batch infusions — a gentle, herbal brightness with altitude energy. Not for the uninitiated palate.

05 Buenos Aires Province

Pampa Wildflower Honey

Single-origin clover and wildflower honey from family apiaries two hours south of the city. Buttery, floral, and far removed from anything sold in supermarkets.

06 Cafayate, Salta

Torrontés Grape

Argentina's most distinctive white grape variety: high-floral aroma, soft acidity, slight bitterness. We use it fresh-pressed in citrus-forward drinks and as a house ferment.


How We Work

Three principles we never negotiate.

Provenance before prestige.

We will not use a spirit because it's fashionable. Every bottle behind our bar has a producer, a place, and a story we can tell at the table. If we can't explain where it came from, it doesn't belong here.

Seasonality is not optional.

Our menu changes four times a year because the land does. Calafate berries are not available in June. Torrontés is pressed in March. We follow that calendar, not a print schedule.

Hospitality without theatre.

There are no passwords, no hidden doors, and no airs. Raíz is warm, luminous, and quietly confident. We want you to sit for three hours and feel like a regular by the end of the first drink.
